Sauce: Creamy Garlic-Herb Sauce

Recipe Introduction
This is an excellent sauce for fettucine or other wide pastas. Also great on chicken breast.
List of Ingredients
1/2 cup butter
1/4 cup shallots or onions, minced
6-8 garlic cloves, minced
1 tsp. dry leaf thyme
1 tsp. dry basil
1/2 tsp. dry oregano
1/2 tsp dry tarragon
½ tsp. Salt
½ tsp. white pepper
½ tsp. dry mustard
3-4 tbsp. Flour
1 liter cold milkRecipe
Melt butter in a 2 quart heavy saucepan over medium heat.
Add shallots, garlic and all the herbs & spices. Saute until tender.
Add flour to make a medium thick roux. Cook over low heat for 5-10 minutes until blond color.
Whip in cold milk, continuing to stir constantly. Reduce heat and simmer 15-20 minutes stirring occasionally.
Taste and re-season, adjust consistency as necessary.
