Sauce: New Mexican Red Chili Sauce

3 Anaheim chili peppers
2 poblano chili peppers
2 onions, chopped
1 tbsp garlic, chopped
10 cups veal stock
1 stick cinnamon
3 whole cloves
1/2 cup fresh lime juice
2 oz semi-sweet chocolate, grated
salt & pepper
Recipe
Sauté the chili peppers, onions, and garlic together, add the veal stock along with the cinnamon, cloves, and lime juice. Bring to a boil and continue to boil until the mixture reduces to 3 cups. Strain the sauce and then stir in the chocolate.
YIELD: 3 Cups
