2 tablespoons smooth peanut butter
1 + 1/2 teaspoons tomato paste
1/4 cup hoisin sauce
1 teaspoon sugar
1/3 cup water
1 teaspoon safflower or corn oil
1 + 1/2 teaspoons minced garlic
1 teaspoon crushed red pepper
Recipe
In a small bowl, combine peanut butter, tomato paste, hoisin, sugar and water. Blend until smooth. Heat a small heavy saucepan over medium-high heat. Add oil, heat until hot and add garlic and red pepper. Fry 5 seconds. Add peanut butter mixture, stir to blend and cook 3 to 4 minutes, until thickened. Remove from heat. Cool slightly. Sprinkle with chopped peanuts.
Serve warm or at room temperature. Can be covered and refrigerated up to a week.
