    Legumes: Black Bean and Corn Saute

    Recipe Introduction

    Spice up any meal with this colorful and nutritious side dish that is packed full of flavor.

    List of Ingredients

    1 tablespoon vegetable oil
    1/2 cup chopped red or green bell pepper
    1 can (16 ounces) whole-kernel corn, drained
    2 green onions, sliced, (optional
    1 teaspoon McCormick® Cilantro Leaves or Dill Weed
    1/8 teaspoon McCormick® Ground Red Pepper
    1 can (15 ounces) black beans, drained and rinsed



    Recipe

    1. Heat oil in medium-size skillet. Add red or green bell pepper and sauté over medium-high heat 1 minute.

    2. Add corn, green onions, cilantro or dill, and red pepper. Sauté 1 minute.

    3. Add black beans and cook until heated through.

    Makes 6 (1/2 cup) servings
