Legumes: Jack and Coke Baked Beans

    Source of Recipe

    The Wichita Eagle

    List of Ingredients

    1 pound ground chuck

2 (28-ounce) cans baked beans or pork and beans

    1 (16-ounce) jar salsa

    1 onion, chopped

    1 tablespoon brown sugar

    1 shot (3 tablespoons) Jack Daniel's whiskey

    1 shot (3 tablespoons) Coca-Cola

3 tablespoons ketchup (or to taste)

5 tablespoons mustard (or to taste)

    Tabasco to taste

    Salt and pepper to taste

    Recipe

Preheat the oven to 350. In a skillet over medium heat, brown the beef and drain. In a 2 ½-quart baking dish, combine the browned beef, canned beans, salsa, onion, brown sugar, whiskey and cola. Add the ketchup, mustard, Tabasco and salt and pepper to taste. Stir well, cover and bake for 2 hours, until the onions are translucent and the sauce is bubbly.

    Serves 10.

CHEF'S NOTES: Your guests may not be able to identify the "secret ingredients" in these baked beans, but they'll love to learn that whiskey and cola are in there. Turn it into a main course by serving with cornbread.

It's perfect for cookouts, tailgating and Sunday supper.

If you're making it and taking it, reheat it in the microwave or carry in a slow cooker.

Turn this into a vegetarian dish by using vegetarian baked beans, eliminating the ground beef, and stirring in 12 ounces of meat-substitute "crumbles" in the last 20 minutes of baking time.
