Potato: Mom's Potato Salad

List of Ingredients
- 6 medium boiling potatoes
- 1/3 cup red-wine vinegar
- 2/3 cup olive oil
- 1/2 tsp. salt
- 1 medium red onion
- 1 large stalk of celery
- 2 small cucumbers
- 6 hard-boiled eggs
Instructions
- Cover potatoes with cold water, salt lightly, bring to a boil and cook until just tender - about 20 minutes. When cool enough top handle, peel and slice into a large bowl.
- Place vinegar, oil and salt in a jar; shake well. Pour over potatoes, just enough to moisten.
- Peel onion and slice thinly, then stack and cut into quarters or sixths, so you have onion shreds. Add to bowl.
- Chop celery and add to bowl. Peel cucumbers, slice thinly and add to bowl. Stir well.
- Add addiontal dressing if desired, stir well, then taste to adjust salt.
- Slice eggs and mix gently with salad.
