    Potato: Mom's Potato Salad

    List of Ingredients


    • 6 medium boiling potatoes
    • 1/3 cup red-wine vinegar
    • 2/3 cup olive oil
    • 1/2 tsp. salt
    • 1 medium red onion
    • 1 large stalk of celery
    • 2 small cucumbers
    • 6 hard-boiled eggs


    Instructions


    1. Cover potatoes with cold water, salt lightly, bring to a boil and cook until just tender - about 20 minutes. When cool enough top handle, peel and slice into a large bowl.

    2. Place vinegar, oil and salt in a jar; shake well. Pour over potatoes, just enough to moisten.

    3. Peel onion and slice thinly, then stack and cut into quarters or sixths, so you have onion shreds. Add to bowl.

    4. Chop celery and add to bowl. Peel cucumbers, slice thinly and add to bowl. Stir well.

    5. Add addiontal dressing if desired, stir well, then taste to adjust salt.

    6. Slice eggs and mix gently with salad.
