    Corn: Onion-Topped Corn Pudding

    List of Ingredients

    Crisco® Original No-Stick Cooking Spray
    1/4 cup butter
    2 cups chopped onion
    1 cup sour cream
    2 large eggs
    1 (14.75 oz.) can cream-style corn
    1/2 cup buttermilk
    1 cup Martha White® Plain White Corn Meal
    2 tablespoons sugar
    1 1/2 teaspoons baking powder
    1/2 teaspoon salt
    1/2 teaspoon dried dill weed
    1 1/2 cups shredded sharp Cheddar cheese, divided

    Recipe

    1. HEAT oven to 400°F. Coat shallow 2-quart baking dish with no-stick cooking spray.

    2. MELT butter in medium skillet. Add onion. Cook and stir 10 minutes or until tender. Remove from heat. Stir in sour cream. Beat eggs in large bowl. Stir in corn, buttermilk, corn meal, sugar, baking powder, salt, dill weed and 1 cup cheese until blended. Pour into prepared baking dish. Spoon onion mixture evenly on top. Sprinkle with 1/2 cup cheese.

    3. BAKE 25 to 30 minutes or until onions just begin to brown. Cool 15 minutes before serving.
