Potato: Lorraine Potatoes

List of Ingredients
8 bacon slices, chopped
1 bunch green onions, chopped
1 package (26 ounces) frozen country-style hash brown potatoes
2 packages (4 ounces each) shredded Swiss cheese (divided)
4 large eggs
1 cup half-and-half cream
1/4 teaspoon ground red pepper
1/8 teaspoon ground nutmeg (optional)
Recipe
Cook bacon in a large skillet over medium-high heat about 8 minutes or until crisp. Drain bacon, reserving 1 tablespoon drippings in pan.
Saute onion in hot drippings over medium-high heat 1 minute. Remove from heat and stir in potatoes and bacon. Spoon half of mixture into a lightly greased 13-by-9-inch baking dish. Sprinkle with half of cheese and top with remaining potato mixture.
Whisk together eggs, half-and-half, red pepper and nutmeg. Pour over potato mixture.
Bake at 350 degrees 30 minutes. Sprinkle with remaining cheese, and bake 5 more minutes.
Makes 8 to 10 servings.
