Potato: Praline Sweet Potatoes & Apples

1/4 cup butter
3 medium sweet potatoes (1 pound), peeled and sliced 1/4 inch thick
1/4 cup packed brown sugar
1/4 cup chopped pecans
1/4 teaspoon cinnamon
1/8 teaspoon salt
2 apples, peeled, cored and sliced
Recipe
Melt butter in a 10-inch skillet over medium heat. Add sweet potatoes. Cover and cook over medium heat for 5 minutes. Turn slices, reduce heat and cover and cook for 5 more minutes.
Remove potatoes from skillet. Stir in brown sugar, pecans, cinnamon and salt. Return potatoes to skillet. Add apple slices and mix lightly to coat with brown sugar mixture. Cook, stirring occasionally, for 5 minutes or until potatoes and apples are tender and glazed.
Serves 4.
