Potato: Red Skin Potato Salad

1 cup mayonnaise
2 Tbsp red wine vinegar
1/2 Tbsp salt
1 tsp sugar
1/4 tsp pepper
1 cup sliced celery
1/2 cup chopped onion
2 chopped hard boiled eggs
4 Tbsp parsley
1 tsp paprika
2 Tbsp Dijon mustard
5-6 medium red skin potatoes
Recipe
Boil potatoes until cooked through. In the meantime, stir together all other ingredients.
Allow the potatoes to cool just enough to handle them. Cut them into about 1 inch chunks and stir into bowl containing the other ingredients.
Cover and refrigerate.
YIELD: 5 or 6 Cups
