Rice: Curry Rice with Peas

2 1/2 cups boiling water
1 teaspoon salt
1 1/4 cups uncooked long-grain rice
1/4 cup butter or margarine
1 1/2 teaspoons curry powder
1 1/2 cups frozen green peas
1 tablespoon chopped pimiento or roasted red pepper
Recipe
In a large Dutch oven or covered casserole, combine boiling water, salt, rice, butter and curry powder. cover and bake at 375° for 55 minutes. Cook peas, drain, and stir into rice mixture with pimiento.
Serves 6.
