Veggies: Baked Summer Veggies

Recipe Introduction
Use your favorite veggies to make this dish.
List of Ingredients
• 1 medium red bell pepper, chopped
• 1 medium yellow bell pepper, chopped
• 1 medium green bell pepper, chopped
• 1 medium zucchini, chopped
• 1 medium yellow squash, chopped
• 1 medium sweet onion, chopped
• 3 tbsp olive oil
• 1 tsp basil
• 1 tsp oregano
• 1 tsp rosemary
• 1 tsp thyme
• 1/2 cup(s) goat cheese, crumbled
• 2 tbsp balsamic vinegarRecipe
1. Slice veggies and place in a Ziploc bag.
2. Pour olive oil, sea salt and a little pepper into bag. Seal and toss to coat.
3. Marinate as long as you can (overnight is best). If you plan on serving the veggies that night, leave on counter so that the oil stays warm and is absorbed more quickly.
4. Before cooking, throw spices in bag.
5. Pour into a baking dish and cook for 1 hour at 375 degrees. (Don't cover.)
6. When finished cooking, sprinkle w/ goat cheese. Toss. Sprinkle with balsamic vinegar. Toss and serve.
