2 c water

The first thing you need to do is add the 2 cups of water to a small saucepan. Then you'll add all the dry ingredients, and stir. Cook the mixture until it reaches 220 degrees.
The temperature is critical, so you'll want to use a candy thermometer if you have one. If you don't, just watch for the ingredients to reduce and bubble on top. This process takes about 5 minutes. When the mixture turns syrupy, add the pecans.
Cook the pecans in the syrup for about 5 minutes until the syrup coats the nuts, and stays on the nuts, stirring constantly so they don't burn.
Next you want to drain the pecans and put them immediately into a pan filled with 1" of oil heated to around 350 degrees. You'll want to fry them for about 2 minutes or until they turn crisp and brown. Then use a slotted spoon to transfer the pecans to a paper towel to drain the oil.
Once the nuts have drained, take them off the paper towel, put them in a dish and leave them around the house or make them into gifts by putting them in an airtight container.
Give them away and I guarantee these spicy pecans will make people nuts!
