Roasting blanched almonds very slowly ensures that they remain crisp for several weeks.

1 pound blanched whole almonds (about 2 2/3 cups)
1 teaspoon extra-virgin olive oil
Fine sea salt

Preheat oven to 300 degrees.
Scatter almonds on heavy sheet pan. Drizzle with oil and toss to coat well.
Roast almonds until honey-colored, 40 to 45 minutes, rearranging them occasionally with spatula. Turn off oven and leave door open for 30 seconds to cool it down slightly. Close door and let almonds dry out until oven is completely cool. Sprinkle with sea salt and toss to coat. Pack almonds in tins, jars or wooden boxes.
