    Bisque: Crab Bisque

    List of Ingredients




    1 lb. Cooked crab meat

    3 tablespoons grated onion

    1 clove garlic, halved

    1/2 cup sliced mushrooms

    3 cups skim milk

    1 cup clam juice

    1 tablespoon butter

    3 tablespoons flour

    1/2 teaspoon white pepper

    Pinch of mace

    Pinch of salt

    Recipe



    Pick through crab meat to be sure all shell pieces have been removed.

    Simmer onion, garlic and mushrooms in milk and clam juice for 25 minutes, stirring frequently.

    Heat butter in a saucepan, blend in flour to make a roux.

    Strain milk into roux, discarding vegetables. Whisk bisque until thick and smooth.

    Stir in white pepper, mace and salt. Gently fold crab meat into bisque. Heat, but do not boil.


    Serves 6
