    Chowder: Down-by-the-Dock Chowder

    This chowder will fill up any meal and is easy to prepare!

    List of Ingredients




    1 tablespoon olive oil
    1 cup frozen, chopped onion
    1 stalk celery, minced
    1 teaspoon chili powder
    1 can (14 1/2 ounce) diced Italian style tomatoes and juice
    1 can (15 ounce) corn kernels,drained
    1/4 teaspoon salt
    1 teaspoon sugar
    1 tablespoon Worcestershire sauce
    1 pound fresh or frozen fillet of cod, (or other firm fleshed fish) cut into bite sized chunks
    1/4 cup minced fresh parsley

    Recipe




    Sauté vegetables. Heat oil in soup pot, then sauté onion and celery with chili powder until onion is translucent, about 3 minutes. Add tomatoes, corn, 2 cups water, salt, sugar and Worcestershire and cook 5 minutes.

    Cook fish in soup. Add cod and cook until opaque, about 5 minutes. Stir in parsley and serve.


    Preparation Time: 20 minutes

    YIELD: 4 Servings
