Soup: City Cafe's Sweet & Sour Cabbage Soup

3 tablespoons olive oil
1 large onion, chopped
2 garlic cloves, minced
1 tablespoon crushed red pepper flakes
¼ cup balsamic vinegar
2 tablespoons brown sugar
6 cups shredded cabbage (a little less than 1 head)
3 cups diced red potatoes (about 3 medium potatoes)
4 carrots, shredded
15-ounce can diced tomatoes, with juice
6 cups vegetable stock (or chicken stock, if you prefer)
Salt and pepper
Fresh chives for garnish (optional)
Recipe
Heat the oil in a large, heavy pot set over medium-high heat. When the oil is hot, add onion; cook until translucent. Add garlic and red pepper flakes; cook, stirring, 1 minute.
Stir in vinegar and brown sugar. When vinegar bubbles, add cabbage, potatoes and carrots. Stir.
Add tomatoes and vegetable stock. Bring to a boil. Season with salt and pepper to taste.
Lower heat. Simmer soup for 30 to 40 minutes, or until the cabbage and potatoes are tender. Taste the soup. Adjust seasoning with a bit more vinegar, sugar, salt and pepper — if you wish. If available, garnish with fresh chives.
Serves 6 to 8.
