Soup: Creamy Roasted Onion & Garlic Soup

3 bulbs peeled whole garlic
1 medium onion, roughly chopped
2 tbsp. olive oil
salt & pepper
4 tbsp. Butter
1 medium onion, fine julienne
1 tsp salt
½ tsp. White pepper
½ tsp. Dry mustard
3-4 tbsp. Flour
2 liters milk
Recipe
Toss garlic and onion in olive oil. Season and spread out on baking sheet. Roast at 350°F. Until tender and browned. Cool slightly and puree in food processor.
In a heavy bottomed saucepan on medium heat, saute onions with salt, pepper and mustard until translucent. Whip in flour to make a roux. Whip in milk, making sure there no lumps. Bring to a boil over medium heat, then lower heat and simmer for 15 minutes. Add onion-garlic puree, taste and re-season as required.
Serving Suggestions:
Serve with warm crusty bread and your favorite wine, of course!
