Goulash: Turkey Goulash Soup

1 Tbsp oil
2 large Spanish onions, cut in half lengthwise, thinly sliced crosswise
1 green bell pepper, diced
3 Tbsp Hungarian paprika (see Note)
1 Tbsp chopped garlic
21/2 lb turkey drumsticks, skin removed (see Tip)
2 cans (14 oz each) 100% fat-free chicken broth and 2 soup cans water
1 can (14.5 oz) diced tomatoes in thick juice
1 tsp caraway seeds
1/2 tsp each salt and freshly ground pepper
1/2 a 16-oz bag coleslaw mix (4 cups)
Recipe
1. Heat oil in 5-qt or larger Dutch oven or heavy-bottomed pot over medium heat. Add onions and bell pepper; cook, stirring occasionally, 15 minutes or until vegetables are well browned. Add paprika and garlic and cook, stirring, about 1 minute until fragrant.
2. Add drumsticks, broth, water, tomatoes, caraway seeds, salt and pepper. Bring to a boil, reduce heat, cover and simmer 1 1/4 hours or until meat is very tender and starts to pull off the bones. Remove drumsticks and let cool. Stir coleslaw into soup; simmer 10 minutes.
3. When cool enough to handle, tear meat from drumsticks in shreds and stir into the soup. Serve with dollops of sour cream. (optional)

Note: Hungarian paprika is more assertive than regular mild paprika. Look for tins in your market’s spice section.
Tip: Grasp the skin with a paper towel and pull it off.
