Soup: Italian Sausage Soup

1 1/2 lb mild Italian Sausage-cut into half inch slices and cooked till not pink inside (You may also use Polska Kelbasa, Beef Sausage etc)
2 Cloves garlic
2 large onions, chopped
1 large can Italian Style tomatoes (28 oz)
3 cups beef broth or prepared boullion1 1/2 Cups dry red wine or water
1/2 tsp dry basil
3 tbsp chopped parsley
1 medium green pepper, seeded and chopped
2 medium zucchini, cut into 1/2 inch slices
5 oz. bow tie noodles
grated parmesan cheese
Recipe
In 5 quart Dutch Oven, use 3 tbsps sausage drippings and add garlic and onion. Cook till soft. Stir in tomatoes and their liquid. Add sausage, broth, wine and basil. Bring to a rolling boil. Cover, and reduce heat to simmer. Cook for 20 minutes. Stir in parsley, green pepper, zucchinni, and noodles. Cover and simmer stirring occasionally, until noodles are al dente. (10 to 15 minutes)
Skim off and discard fat.
Pass cheese at the table. Great with Italian salad and bread sticks.
