    Soup: New York Italian Tortellini Soup

    List of Ingredients

    1 package (4 to 6 large) Italian Sausage
    5 green onions (optional
    2 cloves minced garlic
    5 c. beef broth
    1/2 c water
    ½ cup red wine
    2 c chopped tomato and 1 8 oz can tomato sauce (OR 1 large can chopped tomatoes with juice)
    ½ teaspoon oregano
    ½ teaspoon basil
    1 c sliced carrots
    1 sliced zucchini
    1 chopped green pepper (or sliced yellow squash)
    1 8 oz package fresh cheese tortellini
    3 T diced parsely
    fresh shredded parmesan cheese for garnish

    Recipe

    In large soup pot, brown sausage without casings; remove from pan and cut up. Drain all but 1 T grease. Brown onions and garlic. Add broth, wine, water, tomatoes, tomato sauce, oregano, basil, carrots and sliced sausage. Bring to boil. Reduce heat and simmer 20 minutes, uncovered. Skim fat. Add zucchini, green pepper, tortellini and parsley. Simmer 30 minutes, covered.

    Sprinkle with lots of parmesan cheese and serve with crusty bread.

    Serves: 4 to 6
