    Soup: Sean's Cream of Garlic Soup

    Recipe Introduction

    Adapted from a cajun healing recipe.

    List of Ingredients

    2 pounds onions, peeled and chopped
    2 cups garlic, peeled and sliced
    2 tablespoons olive oil
    2 tablespoons butter
    1-2 quarts chicken stock
    1 garnish bouquet of parsley stems, thyme sprigs and bay leaf, tied together
    2 cups stale french bread, torn into 1/2" pieces
    1 cup heavy cream

    Recipe

    1. In a 4-quart pot, saute the onions and garlic in the butter and oil.

    2. Stir frequently over low to medium heat until the onions are browned, about 30 minutes.

    3. Add the chicken stock and garnish bouquet and bring to a boil. Stir in the bread cubes and simmer for 10 minutes, until the bread is soft.

    4. Remove the garnish bouquet and puree the soup in a blender. Strain the soup through a medium strainer, reheat and add the heavy cream.


    YIELD: 8 Servings
