Soup: Alphabet Chicken Soup

List of Ingredients
1 1/2 cups dry alphabet pasta or other small macaroni
Water
1 large onion, chopped
2 carrots, sliced
3 ribs celery, sliced
2 cooked boneless, skinless chicken breasts or 1 (10-ounce) can white chicken meat in water
1 (49-ounce) can reduced-sodium chicken broth
1 tablespoon butter or margarine
2 large garlic cloves, pressed or minced
2 teaspoons dried parsley flakes

Recipe
Cook pasta according to directions on package in boiling water until tender; drain and set aside.
Meanwhile, chop onion; slice carrots and celery. Cut chicken into small chunks or open can of chicken and drain and rinse.
Pour chicken broth into a crock-pot and turn it to high.
Melt butter over medium-heat in a nonstick frying pan.
Add onion and garlic and cook until lightly browned, about 3 minutes.
Add chicken pieces and saute a few minutes more. Add 1/3 cup of the chicken broth if the bottom is too dry.
Add chicken mixture to chicken broth in crock-pot along with carrots, celery, parsley, pasta and black pepper to taste.
Cook soup until carrots are tender, about 2 hours.
Yields 7 (8-ounce) servings.
Per serving: 199 calories; 4 g fat (1 g saturated fat; 18 percent calories from fat); 22 g carbohydrate; 22 mg cholesterol; 266 mg sodium; 17 g protein; 2 g fiber.
