Soup: Cheeseburger Soup

1 lb 90% lean ground beef
2 tbspn olive oil
1/2 onion, diced
4 tbsp butter
4 cups chicken stock
4 Yukon gold potatoes, diced
1/3 cup flour
1 1/2 cup 2% milk
8 oz. velveeta cheese, cubed
2 tomatoes, diced
1 cup lettuce, chopped
6 hamburger buns, cubed

Recipe
Heat oven to 400 degrees. Brown meat in a skillet drizzled with 1 tbspn olive oil over medium heat, drain any excess fat and set aside. In a deep sauce pot, saute onions in 1 tbspn butter over medium heat until soft and translucent, about 6 minutes. Add chicken stock and bring to a boil. Add potatoes and cook for 12 minutes.
Melt 3 Tbspn of butter in a sauce pan over medium heat and sprinkle in flour. Cook out the raw flour taste for a minute or two and then whisk in milk. Bring to a boil and stir until thick, about 5 minutes. Meanwhile, cube the buns and place on a baking sheet. Toss with olive oil and salt and bake until golden brown and crispy, 8 minutes.
Add the thickened sauce and velveeta cheese to the simmering chicken broth. Stir in the ground beef, lettuce, and tomatoes. Serve in bowls with the bun "croutons" on top.
