    Soup: Egyptian Bean & Vegetable Soup

    List of Ingredients




    1 c chopped onions
    2 cloves garlic
    1/4 cup olive oil
    1 t cumin
    1 1/2 t paprika
    1/4 t cayenne
    2 bay leaves
    1 large carrot, chopped
    1 cup chopped tomatoes
    3 1/2 cups vegetable stock
    2 cups canned or cooked garbanzos
    1/4 cup chopped fresh parsley
    3 T fresh lemon juice
    salt and pepper to taste
    fresh mint leaves (optional)

    Recipe



    Throw the olive oil in your soup pot and let it heat up a little bit, then throw in the onions and garlic to saute.

    When the onions are translucentish, toss in the cumin, paprika, cayenne, bay leaves, and carrots & let it cook over medium heat for about 5 minutes or so.

    Stir in the tomatoes and veg stock and let it simmer for about 15 minutes. When the carrots are tender, add the beans, parsley and lemon juice. Salt and pepper to taste.

    REMOVE BAY LEAVES & SERVE
