Soup: Southern Style Onion Soup

Ingredients:
1 lb. of onions
1 stick of butter
1/2 teaspoon of sweet onion French's mustard
salt and pepper to taste
touch of plain regular flour
3 1/2 cups of rich chicken stock
1/2 cup of Brancott Sauvignon Blanc
4 slices of french bread lightly toasted
with cheese gratine of your choice
Recipe
Peel and finely slice the onions. Melt the butter in a large saucepan, then add the onion rings, salt and pepper and the sweet onion French's mustard.
Cook over medium heat; stirring occasionally until the onions are browned - this will take 20-30 minutes.
Add the flour until smooth. Next add the stock and the Brancott Sauvignon stirring constantly.
Bring to a boil; then reduce heat to simmer for 30 minutes.
Taste and adjust seasoning. Place a slice of toasted bread on the bottom of the soup plate. Pour in the soup and sprinkle with finely grated cheese. Place under a hot broiler until the cheese is beginning to brown.
Serve at once!
