    1 tbsp (15 mL) butter

    1 small white onion, finely chopped

    1 1/2 lb (675 g) orange sweet potatoes, peeled and cut into 3/4-inch (1.8-cm) dice

    2 firm pears, peeled, cored and cut in 3/4-inch (1.8-cm) dice

    3 cups (750 mL) chicken OR vegetable stock

    1 cup (250 mL) whipping cream

    Salt and freshly ground black pepper, to taste

    Chopped fresh mint, to garnish

    Melt butter in saucepan over medium heat. Add onion;cook for 2 to 3 minutes or until soft but not brown. Add sweet potatoes and pears; cook, stirring, for 1 to 2 minutes. Add stock; bring to boil and cook for 20 minutes or until sweet potatoes and pears are soft.

    Let mixture cool slightly; then, in blender or food processor, puree in batches. Return to saucepan, stir in cream and gently reheat without boiling. Season with salt and ground black pepper. Garnish with mint.


    SERVES 4
