Alabama Pork Chops

List of Ingredients
6 large center-cut pork chops
1 medium onion
2 cloves garlic
6 large tomatoes, peeled, seeded, and chopped
OR 1 large can crushed tomatoes, drained
1 1/2 cups chicken broth
1 tablespoon thyme
salt and pepper, to taste
Recipe
Brown the pork chops on both sides. Drain off any rendered fat.
Add the rest of the ingredients to the skillet or Dutch oven, cover and cook over medium heat for 1 hour or until very tender. Can be done ahead and reheated later.
Serve over rice.
Serves 6.
