    Oregon: Raisin Rum Pound Cake

    List of Ingredients




    2 C. flour
    1 1/4 C. sugar
    1 1/2 tsp. baking powder
    1 tsp. salt
    1/2 tsp. cream of tartar
    Juice and rind of 1 small orange + water to make 1/2 C.
    1/2 C. shortening
    2 eggs
    3/4 C. raisins

    --- Sauce---
    * 1/4 C. sugar
    * 1/4 C. orange juice
    * 2 tsp. rum extract

    Recipe



    Sift together the dry ingredients. Add orange rind, juice and shortening. Add eggs and beat 2 minutes. Fold in raisins. Pour into a greased foil-lined loaf pan.

    Bake at 350 degrees for 1 hour or until done. Remove cake from pan. Top with sauce ingredients which have been mixed together.

    Yield: 1 loaf
