    4 cups yams, peeled, cut into 1/4 inch slices
    2 tsp lemon juice
    1 prepared pie crust
    1 cup packed brown sugar
    1 T all-purpose flour
    1/2 tsp nutmeg
    1/2 tsp cinnamon
    1 tsp vanilla
    2 T butter, softened
    2 cups marshmallows


    NOTE: - Sweet Potatoes work the same as yams in this recipe. For extra flavor, replace 2 cups sliced potatoes with 2 cups peeled, sliced, hard apples.

    Recipe



    1. Heat oven to 375 degrees F.

    2. Sprinkle yams with lemon juice.

    3. Place pie crust in 9-inch pie plate.

    4. In large bowl, combine brown sugar, flour, nutmeg, cinnamon and vanilla. Add yam slices and butter. Toss well to combine; fill pie crust gently, arranging slices so they do not hang over sides.

    5. Bake 1 hour. Top pie with even layer of marshmallows; bake an additional 20 minutes. Let cool 10 minutes. When baked, slices should be tender and marshmallows brown. Serve as side dish with dinner.
