    Carrot Salad with Fennel

    List of Ingredients




    2 tablespoons chopped fennel leaves
    3 cups grated carrots
    2 tablespoons olive oil
    1 tablespoon lemon juice
    1 tsp. Dijon mustard

    Recipe



    Mix the fennel and carrots. Whisk the oil, lemon and mustard together.

    Pour over the vegetables. Mix well and chill for at least 1 hour, stirring every once in awhile.

    YIELD: 4 Servings
