    1 pound zucchini (2 med or 4 sml),
    -- cubed
    1 12 oz can whole kernel corn, drained
    1 2 oz jar chopped pimiento, drained, optional
    2 cloves garlic, crushed
    2 tablespoons oil
    1 teaspoon salt
    1/4 teaspoon pepper
    1/2 cup grated parmesan cheese

    Recipe



    Mix zucchini, corn, pimiento, garlic, oil, salt and pepper in a skillet. Stir to coat and then cover and cook over medium heat, stirring occasionally, until zucchini is crisp-tender, about 10 to 13 minutes. Serve with a little cheese sprinkled over the top.

    P.S. You can also add 1 cup fresh tomatoes, seeded and chopped, to this recipe for a wonderful addition.
