Green Beans With Parmigiano

List of Ingredients
2 pounds green beans
4 tablespoons ( 1/2 stick) butter
2 small onions, chopped
1 teaspoon grated fresh lemon zest
Pinch of freshly ground nutmeg
Salt and freshly ground black pepper
1/2 cup freshly grated Parmigiano- Reggiano
Recipe
1. Snap off stem ends of beans. Bring about 2 quarts water to a boil in a large saucepan. Add beans and salt to taste. Cook, uncovered, until beans are crisp-tender, 4 to 5 minutes. Rinse beans under cold water and drain well. Pat dry.
2. In a medium skillet, melt butter over medium heat. Add onions and cook until golden, about 10 minutes. Stir in beans, lemon zest, nutmeg, and salt and pepper to taste. Sprinkle with cheese and remove from heat. Let cheese melt a little and serve hot.
YIELD: Makes 8 servings.
To make ahead: Do not add cheese until reheating just before serving.
