    Herbed Green Beans w/ Pine Nuts & Hot Vinaigrette

    List of Ingredients

    3 1/2 - 4 cups green beans (1 lb.), trimmed and cut on the diagonal into 1 1/2 inch pieces
    2 tsp. extra virgin olive oil
    1/2 tsp. dried savory, crumbled
    3 Tbs. pine nuts
    1 Tbs. plus 1 teaspoon brown rice vinegar or lemon juice
    2 tsp. mirin or sweet sherry
    1 tsp. natural soy sauce or tamari


    Recipe

    Add the green beans to lightly salted boiling water and allow them to cook uncovered until the water boils again and they are tender and crisp (about 7 minutes). Drain well.

    While the beans are cooking, heat the oil in a heavy skillet over medium-low heat. Toast the savory and pine nuts in the oil, stirring continuously, until the pine nuts are golden (about 3 minutes).

    Add the green beans, vinegar or lemon juice, mirin or sweet sherry, and soy sauce. Saute for 1 minute longer. Serve hot.
