Baked Zucchini Italian Style

2 tablespoons butter
6 medium sliced zucchini
1/3 cup chopped red bell pepper
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon Garlic Powder with Parsley
4 eggs
1 cup half-and-half
1 cup shredded provolone cheese
2 tablespoons flour
1 tablespoon grated romano cheese
Recipe
Preheat oven to 350°F.
Grease a 11x7-inch baking dish; set aside.
Melt butter in a large skillet over medium heat.
Add zucchini, bell pepper, Italian seasoning, salt, pepper and garlic powder.
Sauté 5 minutes or until vegetables are tender-crisp; set aside.
In a large mixing bowl, beat eggs until foamy.
Stir in half-and-half, provolone cheese and flour.
Add vegetable mixture and pour into prepared baking dish.
Sprinkle Romano cheese on top.
Bake about 40 minutes or until center is set.
Let stand for 5 minutes before serving.
