2 cups macaroni, whole-wheat -- cooke and rinsed
1 1/2 cups lowfat cheddar cheese -- shredded
1/2 cup bread crumbs (whole grain)
1/3 cup egg substitute
1 cup tomato sauce
1 cup 1% low-fat milk
1/4 cup celery -- finely chopped
1/4 cup green bell pepper -- finely diced
1/4 cup onion -- grated
1 dash fresh nutmeg -- grated
1 dash paprika
nonfat parmesan cheese -- garnish
Recipe
Preheat oven to 350.
Spray a deep casserole dish with cooking spray.
Layer 1/3 of the cooked macaroni, 1/3 of the cheese and 2 tbsp of the bread crumbs in prepared dish. Repeat with remaining macaroni, cheese and bread crumbs, making 2 more layers.
Combine the egg, tomato sauce, milk, celery, bell pepper, onion, nutmeg and paprika.
Pour this mixture over the macaroni using a spoon to help the liquid reach the bottom of the baking dish if necessary. Top with parmesan cheese.
Bake for 45 minutes, or until bubbly.
