Creamy Four Cheese Macaroni

1/3 cup all-purpose flour
2 2/3 cups 1% low-fat milk
3/4 cup lowfat Swiss cheese
1/2 cup fat-free Parmesan cheese -- grated
1/2 cup lowfat cheddar cheese -- grated
3 ounces light velveeta
6 cups elbow macaroni -- cooked
1/4 teaspoon salt
vegetable cooking spray
1/3 cup melba toast -- crushed
1 tablespoon margarine -- softened
Recipe
Preheat oven to 275.
Lightly spoon flour into a dry measuring cup, and level with a knife.
Place the flour in a large saucepan.
Gradually add the milk, stirring with a whisk until blended.
Cook over medium eat until thick, stirring constantly.
Add cheeses and cook 3 minutes or until cheeses melt, stirring frequently.
Remove from heat, and stir in macaroni and salt.
Spoon mixture in to a 2 quart casserole coated with cooking spray.
Combine crushed toasts and margarine in a small bowl, and stir until blended. Sprinkle over macaroni mixture.
Bake at 275 for 30 minutes or until bubbly.
