Crustless Broccoli-Pepper Quiche

1 cup frozen chopped broccoli
1/2 cup each red and yellow bell pepper
2 Tbsp milk
8 oz cottage cheese
2 Tbsp grated mozzarella cheese
2 Tbsp grated Parmesan cheese
1 tsp whole wheat flour (regular flour may be used)
1 Tbsp Dijon mustard
2 Tbsp whole wheat flour (regular flour may be used)
1 tsp lemon juice
freshly ground nutmeg
dash liquid hot pepper
4 egg whites
1/4 tsp butter
Recipe
Preheat oven to 375 degrees.
Rinse broccoli under hot water and drain.
Chop broccoli and peppers in food processor to a fine dice.
Place in bowl.
Mix in food processor: milk, cheese, mustard and 2 tablespoons flour, lemon juice and seasonings.
Combine with broccoli, beat egg whites until stiff.
Fold into mix. Grease a 9-inch round pan.
Dust with flour, pour into pan.
Bake 35 to 40 minutes or until top is golden brown and knife inserted in center comes out clean.
