    3 tablespoons peanut oil
    1 med. egg, beaten
    3/4 lb. cooked long-grain rice
    1 tablespoon light soy sauce

    Recipe




    Heat wok or large skillet over high heat.
    Add oil and heat until smoking.
    Pour in egg and cook just until beginning to set.
    Add rice and soy sauce, and stir-fry for 2-3 minutes.
