1 pound fresh or frozen, thawed pizza or bread dough
1/2 pound extra-lean ground beef
1 medium onion, minced
1 teaspoon minced garlic
1 red bell pepper, diced
3/4 teaspoon ground coriander
1/4 teaspoon dried oregano
1/8 teaspoon ground red pepper
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 can (8 oz.) tomato sauce
2 tablespoons chopped fresh cilantro, divided
2 tablespoons chopped fresh mint or 1/2 teaspoon dried mint, divided
1 medium zucchini (6 oz.), sliced thin
1/2 cup (2 oz.) feta cheese, crumbled
1 large tomato, chopped

Adjust oven rack to lowest position. Heat oven to 425 degrees F. Pat dough into 12-inch circle, 1/2-inch-thick. Place on cookie sheet, prick with fork and lightly cover with a clean kitchen towel; set aside. Meanwhile, heat nonstick skillet over medium-high heat. Add beef and cook, breaking up, until browned, 4 minutes. Stir in onion and garlic; add bell pepper and cook until tender, 4 minutes. Add coriander, oregano, red pepper, salt and black pepper; cook until fragrant, 30 seconds. Stir in tomato sauce, 1 tablespoon of the cilantro and 1 tablespoon of the mint. Spread meat sauce in even layer over pizza dough, leaving 1-inch border. Top with sliced zucchini and sprinkle with feta. Bake 20 to 25 minutes or until crust is golden and sauce is bubbly. Remove from oven and sprinkle with chopped tomato and remaining chopped herbs.
