    List of Ingredients




    2 tablespoons olive oil
    1 cup onions -- chopped
    1/2 cup carrots -- sliced
    1/2 cup celery -- sliced
    3 cloves garlic -- minced
    4 cups vegetable broth
    1 x 15 oz. can tomato sauce
    1 x 15 oz. can cannellini beans (white kidney beans) -- undrained
    1 x 14.5oz. can diced tomatoes -- undrained
    1 x 8 oz. can kidney beans -- undrained
    1/2 cup elbow macaroni -- uncooked
    2 tablespoons fresh parsley -- chopped
    2 teaspoons dried basil
    1/2 teaspoon oregano
    1/2 teaspoon salt
    1/4 teaspoon freshly ground pepper

    Recipe



    In Dutch oven, heat oil and saute onions, carrots, celery, and garlic until tender.
    Stir in broth, tomato sauce, cannellini, tomatoes, kidney beans, macaroni, parsley, basil, oregano, salt & pepper.
    Bring to a boil, reduce heat, and simmer 10-15 minutes or until macaroni is tender.


    YIELD: 8 Servings
