    Southwest Style Rice and Boca Tenders

    3/4 cup brown rice
    1 Tblsp. canola oil
    1/2 cup chopped onion
    2 garlic cloves, minced
    1 10 oz. can diced tomato with chilies
    3/4 cup water
    1 tsp. chili powder
    1/2 tsp. ground cumin
    1/4 tsp. salt
    1 pkg. (5.5 oz.) BOCA Meatless Tenders, heated, chopped
    3/4 cup canned black beans, rinsed, drained
    2 Tblsp. chopped cilantro

    Recipe



    Cook rice with oil in medium saucepan over medium-high heat 3 minutes. Add onion and garlic; continue cooking 2 minutes.

    Add tomatoes, water, chili powder, cumin and salt; bring to a boil. Reduce heat to medium-low; cover. Simmer 40 minutes or just until rice is tender and most of liquid is absorbed.

    Stir in heated BOCA Tenders, beans and cilantro; continue cooking 5 minutes.
