Vegetarian Enchiladas

3/4 cup refried beans; fat-free spicy
4 (8-inch) four tortillas
1 cup frozen meatless burger crumbles (I use Morningstar
3/4 cup enchilada sauce
1/2 cup Cheddar cheese; reduced-fat shredded, sharp
1 chopped green onions (optional)
Recipe
1. Preheat over to 400 degrees.
2. Spread 3 Tbsp beans over each tortilla. Sprinkle 1/4 cup burger crumbles down center of each tortilla. Place tortillas, seam side down, in an 8-inch square baking dish. Pour sauce over tortillas and sprinkle with cheese.
3. Bake for 15 minutes or until cheese is nice and melted. Top with onions.
