Veggie Sprout Pockets

4 medium pocket bread
8 teaspoons mayonnaise
1 thin cucumber, pared and sliced thinly
1-2 medium tomatoes, sliced thinly
2-3 green onions, trimmed and chopped
4-6 ounces mixed sprouts (alfalfa, bean, radish, lentil and/or wheat sprouts)
Recipe
Spread both sides of halved pocket bread with mayonnaise. Arrange layers of vegetables on both sides of bread and stuffmiddle with mixed sprouts. Serve with fresh fruit slices.
