Texas Angel Food Cake

Recipe Introduction
As with any angel food cake, read up on how exactly to make one. They can be tricky and if you beat the batter too much, for example, you'll end up with a 2-inch tall cake.

List of Ingredients
1 ½ c cake flour
2 t cream of tartar
2 ¼ c sugar
12 large egg whites
¼ t salt
1 T lemon juice
1 t vanilla extract
Recipe
Sift flour and measure. Add 1-teaspoon cream of tartar, and sift five times. Sift sugar and measure. Set aside. Beat egg whites until they hold up in peaks. Add salt and 1-teaspoon cream of tartar. Add sugar, 2 Tablespoons at a time. Add lemon juice and vanilla. Fold in flour, 2 Tablespoons at a time.
Run a knife CAREFULLY through the batter(after it's in the pan) to release air bubbles. Bake in a tube pan at 3750 for 30 minutes and then reduce temperature to 3250 and bake 30 minutes longer. Cool upside down (perching it on top of a soy sauce bottle or something works nicely).
