Asparagus Tempura
List of Ingredients
- 2 cups ice water
- 1 2/3 cups flour
- 1 egg yolk
- 1/8 teaspoon baking soda
- 3 cups oil
- 2 pounds thin, fresh asparagus
- Salt
Instructions
- Combine ice water, flour, egg yolk, and baking soda and beat until smooth. Cover and refrigerate until ready to use.
- Heat oil in shallow pan to 375 degrees F. Prepare asparagus; clean, trim and cut into 2-inch pieces.
- Dip asparagus pieces into batter and fry in hot oil until golden brown. Drain on paper towels, salt lightly and serve.
