    Asparagus Tempura


    List of Ingredients


    • 2 cups ice water
    • 1 2/3 cups flour
    • 1 egg yolk
    • 1/8 teaspoon baking soda
    • 3 cups oil
    • 2 pounds thin, fresh asparagus
    • Salt


    Instructions


    1. Combine ice water, flour, egg yolk, and baking soda and beat until smooth. Cover and refrigerate until ready to use.

    2. Heat oil in shallow pan to 375 degrees F. Prepare asparagus; clean, trim and cut into 2-inch pieces.

    3. Dip asparagus pieces into batter and fry in hot oil until golden brown. Drain on paper towels, salt lightly and serve.
