Julio's Hot Carrots
List of Ingredients
2 pounds carrot, peeled, cut in pieces on
diagonal
1 can whole jalapenos with juice (12 ounce)
2 onions, sliced
2 tablespoons oil
1 cup vinegar
Salt and pepper
Recipe
In boiling water, cook carrots to desired
tenderness. (Don't over cook; they should
still be crisp). Drain.
In a large glass jar or glass bowl,
combine carrots, jalapenos and juice, onions,
oil, vinegar and salt and pepper to taste.
Chill at least 3 hours.
