Cornbread- Jalapeno Cornbread

List of Ingredients
- 2 eggs
- 1 cup milk
- 1 can (16.5 ounces) cream-style corn
- 1 cup yellow cornmeal
- 1/4 cup all-purpose flour
- 1/4 cup sugar
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 3 jalapeno chiles or marinated nacho chiles, minced
- 1 cup grated cheddar cheese
- 4 tablelspoons butter, melted
Instructions
- Place a 9- or 10-inch cast-iron sillet of a 9-inch square baking pan in the oven. Preheat the oven to 375 degrees.
- Beat together the eggs, milk and corn.
- Stir in the cornmeal, flour, sugar, salt, baking soda, baking powder, minced chiles, the cheese, and 3 tablespoons of the melted butter. Blend well.
- Use the remaining 1 tablespoon of butter to coat the skillet or baking pan (be careful the pan will be hot).
- Pour the batter in the pan.
- Bake for 45 minutes, or until the top is golden brown. Serves 8
