    Cornbread- Jalapeno Cornbread

    Recipe Introduction


    Very moist and flavorful.


    List of Ingredients


    • 2 eggs
    • 1 cup milk
    • 1 can (16.5 ounces) cream-style corn
    • 1 cup yellow cornmeal
    • 1/4 cup all-purpose flour
    • 1/4 cup sugar
    • 1 teaspoon salt
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon baking powder
    • 3 jalapeno chiles or marinated nacho chiles, minced
    • 1 cup grated cheddar cheese
    • 4 tablelspoons butter, melted


    Instructions


    1. Place a 9- or 10-inch cast-iron sillet of a 9-inch square baking pan in the oven. Preheat the oven to 375 degrees.

    2. Beat together the eggs, milk and corn.

    3. Stir in the cornmeal, flour, sugar, salt, baking soda, baking powder, minced chiles, the cheese, and 3 tablespoons of the melted butter. Blend well.

    4. Use the remaining 1 tablespoon of butter to coat the skillet or baking pan (be careful the pan will be hot).

    5. Pour the batter in the pan.

    6. Bake for 45 minutes, or until the top is golden brown. Serves 8
