Muffin- Double Apple Muffins
List of Ingredients
- 1 1/3 cups all-purpose flour
- 1 cup oatmeal, quick or old-fashioned, uncooked
- 1/3 cup brown sugar, firmly packed
- 1 tablespoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 2/3 cup milk
- 1/3 cup apple juice
- 1/4 cup vegetable oil
- 1 egg, beaten
- 3/4 cup peeled, chopped apple (about 1 medium)
Instructions
- Heat oven to 400 degrees F. Grease 12 medium muffin cups or line with paper baking cups.
- Combine dry ingredients in a large bowl. Add remaining ingredients except apple pieces, mixing just until moistened. Gently fold in apples.
- Fill prepared mufin cups 2/3 full. Bake 20 to 22 minutes or until golden brown.
