Muffins- Oatmeal Muffins

- 1egg
- 1 cup buttermilk
- 1/2 cup brown sugar (packed)
- 1/3 cup butter or margarine, melted
- 1 cup quick-cooking oats
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon soda
Instructions
- Preheat oven to 400 degrees F. Grease bottoms of 12 medium muffin cups (2 3/4" in diameter). In large bowl, beat egg; stir in buttermlk, brown sugar and butter. Mix in remaining ingredients just until flour is moistened. Batter should be lumpy.
- Fill muffin cups 2/3 full. Bake 20 to 25 minutes or until light brown. Immediately remove from pan. Makes 12 muffins.
